This cake is a luxury take on the Classic Victoria Sponge.
With a freshly made summer berry compote swirled into the sponge and drizzled into a cream cheese frosting in the filling and on top.
It is light and fragrant and best in the summer months when the berries are juicy and sweet.
The Summer Berry Swirl cake is not suitable for heavy decorating, it is all about enjoyment rather than show.
It works really well as a cupcake too.

During lockdown, my husband and I wanted to surprise our daughter, who lived ten miles away, with something special for her birthday.
