Known also as Russian Honey Cake this cake is made of multiple honey biscuit like layers, filled with a sour cream frosting.
The cake needs 24 hours chilling for the layers to soak up the filing to become softer. Therefore it needs ample time from ordering.
There are variations with cherry or blueberry compote added between the layers.

Hi Mina, just to say the group absolutely loved the lamingtons, my friend who lives close to me is probably going to be in touch regarding getting more. They thought there was a great layer of icing (which of course is so disappointing when you bite into one and it doesn’t have enough).
