Australia and New Zealand both claim to have been the birth place of these desserts.
Essentially they are buttery vanilla sponge cuboids dipped in chocolate sauce and covered in coconut.
In Australia these can be found with various fillings, I stick to the plain classic.
These delicious desserts are taken so seriously in Australia that their annual competition for the best Lamingtons, sees the judges use rulers to measure them. Uniform and absolutely perfect are the ones to take the crown.

Hi Mina, just to say the group absolutely loved the lamingtons, my friend who lives close to me is probably going to be in touch regarding getting more. They thought there was a great layer of icing (which of course is so disappointing when you bite into one and it doesn’t have enough).
Fabulous and I wouldn’t change a thing.
