Simple and unpretentious, this cake is just perfect for the warmer months when you fancy something light and not overly sweet.
It is incredibly fragrant with a moist crumb. The cake was named after St’ James’s Cross, stencil of which is sugar dusted over the top to create it’s signature look.
Based on almonds and lemons, Tarta de Santiago is naturally a Gluten Free and Dairy Free Cake.

During lockdown, my husband and I wanted to surprise our daughter, who lived ten miles away, with something special for her birthday.
