This pudding insured cake has layers of spiced dark sponges based on dates, filled with toffee buttercream laced with handmade toffee sauce and topped with mini fudge pieces.
Sticky Toffee Cake is definitely more suited to the winter months when spiced desserts make more sense.
It keeps really well at a room temperature. Works well as cupcakes too.

During lockdown, my husband and I wanted to surprise our daughter, who lived ten miles away, with something special for her birthday.
