This is a four layer cake, well filled with a great ratio between sponge and filling.
Variation: The raspberry jam can be replaced with fresh raspberries for a lighter, less sweet end result.

During lockdown, my husband and I wanted to surprise our daughter, who lived ten miles away, with something special for her birthday.
